Mushroom drying technology is very important, it plays a key role in mushroom shape, color, and flavor. Drying equipment must be dried with a dryer to ensure quality, and all soil drying methods must be eliminated. When drying, they should be divided into thick and thin parts, separated by wet and dry, and the mushroom handle should be laid flat on the baking screen. The water content should be small, and the thick mushroom should be placed on the bottom layer. The water content should be large, and the thin and small layer should be placed on the top. Fresh mushrooms with large water content can be faced with mushrooms, dried in the sun for 1-2 hours, and then dried in the drying room.

1 Initial drying period: The baking temperature can not be too high or too low, should be at 35 °C is appropriate, then, the inlet and exhaust holes must all open, close the temperature hole closed, drying 3-4 hour. Generally, the temperature rises by 1-2°C per hour and the temperature gradually rises to about 40°C. 2 constant speed drying period: After drying to 4-5 hours, the temperature should gradually rise to about 50 °C, about 2 °C per hour, the intake and exhaust holes closed one-third, this stage is generally dry 3-4 hours. 3 Drying period: When drying for 8-9 hours, the temperature should gradually rise to 55-60°C. At this time, the inlet and exhaust holes should be closed by one half, and the temperature return hole should be opened by one half. General drying 1-2 hours. 4 complete drying period: the last one hour, the temperature should be controlled at 60-65 °C, the intake and exhaust holes are all closed, the temperature hole is fully open, so that the hot air up and down cycle, can ensure that yellow eggs and increase the aroma of bacteria.

Pay attention to five points when drying: 1 temperature and cooling should not be too fast, only gradually increase or decrease, or mushroom cover wrinkles affect the quality. 2 The maximum temperature can not exceed 65 °C, otherwise it is easy to scorch. 3 Mushroom surface is white or gray mushroom, you can put the mushroom on the flat screen mushroom, with a clean sprayer evenly spray water on the dry mushroom surface (can not spray on the bacteria pleats), and then into the drying room, close Doors and windows, stuffy for 30 minutes, then normal drying. One time can not be performed 2-3 times, so that the mushroom surface color is the same. 4 If you do the screening, it must be done quickly after 5 hours. 5 After drying, shiitake mushrooms should be packaged in a timely manner, stored at low temperature, dry and protected from light.
