8 characteristics teach you to judge whether red wine is spoiled
1, the clarity of red wine
If the wine is cloudy and snowflakes are floating, we should assume that the red wine has deteriorated. However, the precipitation of aged red wine is normal, because after a period of time, substances such as pigments and tannins of the wine will combine to produce sediments. In addition, some vintages have only one to three years of red wine. If the bottom of the bottle has crystals, it is basically not damaged. This is caused by the fact that the winery did not handle it when it was frozen, but it does not affect the quality of the wine.
2. Acetic acid
After the bottle is opened, contact with the air for a long time will be eroded by the vinegar wine and make the wine acidic. If the wine is fermented at a high temperature, it will be acetic acid if it is accidentally bottled. The wine leaks in the barrel or in the bottle, such as cork, insects, shrinking and seeping into the air, and the wine will spoil or have the same taste.
3, odor
This is due to the moldy deterioration of the wine caused by deflation, and horse urine-like spoilage during tasting. Oxidized wine is basically bad wine. However, wines such as Sherry, Porto, and Portugal's Maderized, etc., are usually normal if they have an oxidizing taste.
4. Geranium and sorbic acid
Wine produces microorganisms during the fermentation process, which can cause this taste. This kind of wine is generally of rough texture and is supplemented with sorbic acid preservatives. It smells a bit garlicy. For example, domestic sweet-tasting wines (such as Vermouth) are usually sorbic acid. But why are wines that are open so easily spoiled? In fact, there are various reasons for wine spoilage.
5, sulfur dioxide
Most of this odor is due to the excessive processing of sulphur in the brewing process - winemakers need to use sulphur to sterilize, and sweet, semi-sweet wines use high sulphur to stop the fermentation because of high sugar content. This odor is often found in cheap liqueurs, which make the throat dry and uncomfortable.
6, cork
This odor is similar to the rancid odor emitted by a decaying cork. If the smell of wine is lost after a quarter of a mile in the cup, it does not affect the drinking of the wine; if the smell persists, it means that the wine has deteriorated.
7, metal and rat
During the winemaking process, or when the barrels are stored and bottled, they are contaminated with metal and the wine will have a canned taste. If the odor is obvious, the color of the liquor is deepened, and brown precipitates are found in the wine. This is copper contamination. Rat smell, smell like rats, flat plates such as acetic acid, is a sign of bacterial infection, this bacteria usually only infected wine in barrels.
8, rotten eggs and rubber
This odor mixed with the taste of hydrogen sulfide, often occurs in red wine under conditions of high ambient temperature, if no treatment will develop into a significant sewage-like smell. Some young wines have a small amount of this taste, but generally soon after the cup was dispersed.
